In De Trinitate, (Bk III, Ch. 4 CCSL, 50, p. 136)
St. Augustine describes transubstantiation:

"...that which is taken from the fruit of the earth

and properly consecrated by the mystical prayer

unto spiritual salvation and in memory of what the Lord

suffered for us. Although it is brought to that visible

form by the hands of men, it is not made holy

such as to be so great a Sacrament except by the

Spirit of God working invisibily."
